Coconut sugar, also called coconut palm sugar, is made from coconut palm flower sap. This sap is dehydrated by various methods to produce a natural sugar which is fragrant, has a deep caramel flavor and is semi powdered-granulated in texture.
It has a significantly lower glycemic index than regular white table sugar and is rich in antioxidants, minerals like iron, zinc, calcium and potassium, along with some short-chain fatty acids like polyphenols.
